2006 Covey Run Gewurztraminer
This fresh and fun appetizer needs a wine of the same character. Enter Gerwurztraminer. This floral and light white wine will go very well with smoked salmon and work off the horseradish and make for a great paring. Covey Run is located in the Columbia Valley of Washington State.
Smoked Salmon and Horseradish Blinis
Blini are small, savoury pancakes of Russian origin, reminiscent of the humble pikelet but smaller. They are indeed best if served very slightly warm with the cold horseradish cream and salmon a nice contrast. Blinis are excellent with sparkling wine or ChampagneIngredients
- 1 qty Buckwheat Blinis Batter
- 1 Tbsp flat leaf parsley, finely chopped
- 1 Tbsp fresh dill, finely chopped (plus whole sprigs to garnish)
- Slices smoked salmon
- 125g cream cheese, cubed and at room temperature
- 2 Tbsp pickled horseradish
- Flaked salt, to taste
- Freshly ground black pepper, to taste
Method
- Make the blinis batter and add the chopped herbs and mix well and cook.
- Combine the cream cheese, horseradish and salt and pepper to taste.
- Top each blinis with a teaspoon of the cream cheese mixture, then a slice of smoked salmon and finish with a sprig of fresh dill.
