Ingredients
- 2 cloves garlic, finely chopped
- 2 tsp fresh rosemary or 1 tsp dried rosemary
- 2 tsp flaked salt
- ½ tsp black pepper, freshly ground
- Zest of 1 lemon
- 1 cup pine nuts, crushed but not minced
Method
- Combine all the ingredients in a bowl.
- Using a paring knife, make 2cm slits all over the joint.
- Fill each slit with the mixture then rub the rest over the joint.
- Allow joint to stand for 30 minutes to allow flavours to penetrate.
- Cook joint as per instructions.
