Pine Nut and Rosemary Rub

This rub works well for pork or lamb.



  1. Combine all the ingredients in a bowl.
  2. Using a paring knife, make 2cm slits all over the joint.
  3. Fill each slit with the mixture then rub the rest over the joint.
  4. Allow joint to stand for 30 minutes to allow flavours to penetrate.
  5. Cook joint as per instructions.
