Oven Roasted Tomatoes

The amount of garlic, oil, salt and pepper you use will depend on how many tomatoes you're roasting.

Method

  1. Preheat the oven.
  2. Cut the tomatoes in half and place cut side up in a baking dish.
  3. Mix together the garlic, salt, pepper and olive oil.
  4. Brush each half with the mixture; making sure each gets a little bit of each ingredient sitting on the top.
  5. Sprinkle with dried herbs if desired.
  6. Bake in the oven for 1½ -2 hours or until very soft and almost falling apart.
  7. Serve in a salad, as a side dish or an hors d'oeuvre.
