Oven Roasted Tomatoes
The amount of garlic, oil, salt and pepper you use will depend on how many tomatoes you're roasting.
Ingredients
- Roma tomatoes, halved
- Garlic cloves, finely chopped
- Flaked salt
- Freshly ground black pepper
- Olive oil
- Mixed dried herbs (optional)
Method
- Preheat the oven.
- Cut the tomatoes in half and place cut side up in a baking dish.
- Mix together the garlic, salt, pepper and olive oil.
- Brush each half with the mixture; making sure each gets a little bit of each ingredient sitting on the top.
- Sprinkle with dried herbs if desired.
- Bake in the oven for 1½ -2 hours or until very soft and almost falling apart.
- Serve in a salad, as a side dish or an hors d'oeuvre.
