Muesli Slice or Bars

Muesli bars are a great way of making sure you don't skip breakfast if you have an incredibly busy schedule. Make a batch of these at the start of the week and grab one before you dash for the door in the morning. Muesli bars also make a great energy boosting snack. Ideal for sticking in your backpack and eating whilst hiking, cycling or rambling.

Method

  1. Combine oats, coconut, and wheat germ in a greased 22cm square pan.
  2. Bake for 25 minutes, stirring occasionally.
  3. Set aside.
  4. Combine butter, sugar, and honey in a medium saucepan; cook over medium heat, stirring occasionally, until butter melts and sugar dissolves.
  5. Remove from heat, and add peanut butter and vanilla, stirring until peanut butter melts.
  6. Pour over oat mixture.
  7. Add peanuts and raisins, and stir well. (Mixture will seem dry at first; continue stirring until moist.)
  8. Press mixture firmly into pan with greased fingertips.
  9. Bake for 12 minutes.
  10. Cool on a wire rack.
  11. Cut into bars.
