How to Shave Asparagus

Trim the asparagus by removing the woody end and the heads.

Then, using a vegetable peeler or similar, take one spear at a time and run the vegetable peeler down the spear shaving off parts of the spear. When one side gets thin, turn it over and repeat till the as much of the spear is shaved as possible.

The shavings can be used raw in salads or blanched and used as a garnish or side dish.
