How to Roast Vegetables
Vegetables can be roasted in the oven, or on a barbecue. This method will work for all vegetables, but roast poatatoes are made following a slightly different method. They are simple and delicious and great with any meal. Make sure they’re all approximately the same size so they cook together.

Your choice of vegetables, peeled and washed (approx 1 cup per person)
Olive oil, and
Flaked salt and freshly ground black pepper
How to...
- Peel (if desired) and chop the vegetables into even bite-sized pieces. For the vegetables to cook evenly it’s advisable to make them all the same size.
- Place the vegetables in a baking dish and drizzle with oil.
- Shake the dish well to coat the vegetables.
- Sprinkle them with flaked salt and freshly ground black pepper.
