How to Juice Citrus Fruit
You can juice citrus fruit several ways, but the most common ways for most cooks is by using a citrus juicer which is a gadget with a cone shaped top that sits on a base with lips on either side for pouring the extracted juice, or a citrus reamer which is a hand held tool that has an end much like the top of the juicer.
Begin by cutting your fruit in half, then using the juicer, place one half on top of the cone and apply enough pressure while twisting the half back and forth until the desired amount of juice is extracted. Repeat with the number of halves you have to squeeze.
The advantage of a juicer is that the seeds are trapped in the top half while the juice slips through into the bowl below.
To juice with a reamer, you’ll also need to halve the fruit, then place the point of the reamer into the centre of the fruit half and using your wrist again, rotate the reamers back and forth while applying pressure forward as well towards the end of the fruit half, while gripping the fruit half with the other hand and also applying pressure almost gripping the reamer inside the fruit, expelling the juice as you go. With a reamer, you will get seeds falling into the bowl with the juice, which you’ll need to strain out.
