How to Chop Herbs

When you’re chopping herbs, remove as much of the stalk as possible so you end up with just the leaves or the fronds.
 

Taking a cook’s knife, begin by just chopping generally in the same way we chop other vegetables, then holding the knife tip with one hand grip the handle of the knife with your other hand and rock the knife over the top of the herbs until you get them to the fineness you want.

All herbs except for leaf herbs can be chopped in this way.
