How to Blanch Vegetables
To blanch vegetables, bring a saucepan of water to the boil.
Place a strainer inside the saucepan so it sits completely inside the rim and immerses in the water.
When the water comes to the boil, place the prepared vegetables inside the strainer, making sure they are completely immersed in the boiling water.
Allow to boil for the specific length of time according to the Vegetable Blanching Guide table on this site.
When the blanching time is up, immediately remove the strainer with the vegetables from the boiling water and plunge the strainer into icy cold water to stop the cooking process.
