How to Bias or Diagonally Cut Vegetables

Bias or diagonally cutting is to slice the food at an angle producing elongated pieces. Bias cutting is used extensively in Asian cuisine, particularly for stir fried ingredients.

  • To perform a bias/diagonal cut, first peel and trim the vegetable or trim meat of fat, silver skin,and connective tissue.
  • Then place on a cutting board and hold the blade so it cuts the food at an angle, the sharper the angle, the longer the cut surface will be.
  • Continue making cuts along the vegetable/meat to create uniform pieces.
