How to Batonnet

Batonnet is the third step in creating medium dice or cubes. Begin by trimming up the vegetable. Its easier to cut batonnet from an oblong shape, so begin by slicing off each of the sides of the vegetable then each of the ends so you end up with an oblong shaped block of vegetable.

Now cut the oblong shape into 1cm thick slices. Now either individually or layered, cut the slices into 1cm batons, known as batonnet.
