Dried Fruit Paste
This paste made from dried fruit is a perfect spread for rolled pork joints, turkey breasts or chicken. It keeps well and adds a deleicious flavour to white meats. Try it spread inside your pork roast or turkey breast for Christmas.
Ingredients
- 1 cup chopped dried fruit of your choice
- ½ cup apple juice
- 1 cup chicken stock
- 4 fresh sage leaves or ½ tsp dried sage
- 2 Tbsp butter
- 1 tsp ground ginger
- 2 cloves garlic
- 1 Tbsp lemon juice
- Rice bran oil
Method
- In a saucepan, combine all the ingredients and heat over medium heat.
- Cook until the fruits are reconstituted and the liquid is reduced by half, about 25 minutes.
- Transfer the fruit mixture to a blender or food processor and puree until thick and smooth.
- Paste will keep in the fridge for several weeks if kept in an airtight container.
- Use as required in your recipe.
