Dried Fruit Paste

This paste made from dried fruit is a perfect spread for rolled pork joints, turkey breasts or chicken. It keeps well and adds a deleicious flavour to white meats. Try it spread inside your pork roast or turkey breast for Christmas.

Ingredients

Method

  1. In a saucepan, combine all the ingredients and heat over medium heat.
  2. Cook until the fruits are reconstituted and the liquid is reduced by half, about 25 minutes.
  3. Transfer the fruit mixture to a blender or food processor and puree until thick and smooth.
  4. If the blender sticks, add extra stock or apple juice to get it moving again.
  5. Paste will keep in the fridge for several weeks if kept in an airtight container.
  6. Use as required in your recipe.
