BBQ Pork Pancakes

If you're a fan of Peking Duck you'll love these pork pancakes. Similar but slightly different flavour, the pork has been cooked Char Sui style before being placed in the pancake with the sauce. Just delicious. Hard to stop eating them.

Ingredients

Method

  1. Combine flour, cornflour, water, milk, eggs and half the butter in a food processor. Process until batter is smooth.
  2. Pour into a jug. Cover and stand for 15 minutes.
  3. Heat a non-stick frying pan over medium heat. Brush with remaining butter.
  4. Pour a tablespoonful of batter into frying pan.
  5. Spread to form a thin pancake, about 16cm in diameter.
  6. Cook for 2 minutes. Turn and cook for a further 1 minute.
  7. Transfer to a plate. Repeat with remaining batter.
  8. Thinly slice the pork and cut eschallots into 10cm lengths.
  9. Place some pork, 2 pieces of onion and 1 teaspoon of hoisin sauce onto each pancake.
  10. Roll up and serve.
