Basic Ricotta Filling
Because this filling will be used as part of another recipe, the cooking time and temperature will depend on that associated recipe. It can be made sweet or savoury, depending on its end use. It can also be packed into a loaf tin and baked, or into muffin tins and served individually.
Ingredients
- 250g fresh ricotta
- 1 egg
- ½ cup icing sugar (for sweet version)
- Flaked salt and freshly ground black pepper to taste (for savoury version)
- Grated fresh parmesan cheese to taste (optional for savoury version)
Method
- Place the ricotta, icing sugar or salt and pepper and egg into a bowl and beat till thick and smooth.
- Use as required.
